Sauteed Ramp and Radish Potato Salad with Warm Mustard Dressing

(Serves 4)

  • 4 large red potatoes
  • 3 slices bacon, diced
  • 1 bunch ramps – bulbs chopped, greens chopped and reserved
  • 2 tablespoons stone ground mustard
  • 1 cup chicken stock
  • 1 bunch radishes, sliced
  • 8 cherry tomatoes, halved
  • Salt and PepperBoil potatoes until done.  Set aside to cool slightly.Saute diced bacon until crisp.  Add ramps, saute until just soft. Add mustard and stir.  Add chicken stock and stir all ingredients.  Simmer to slightly reduce the liquid.

    Cut potatoes into bite sized slices.  Add to liquid and mix to coat.  Cook until potatoes are warmed, approximately 5 minutes.

    Add radishes and stir well.  Add reserved ramp greens and tomatoes.  Stir, salt and pepper to taste and serve immediately.

    PS:  If you are unfortunate enough not to have ramps, feel free to substitute scallions and a little garlic.
