Chicken with Sorrel and Ramps

Serves 4

2 tbsp olive oil
4 boneless, skinless chicken breasts
Salt and pepper
1 bunch ramps, bulbs chopped, greens chopped and reserved
1 cup chicken stock
6 cups loosely packed sorrel, trimmed and washed

1.  Add olive oil to large skillet and heat.

2.  Add chicken breasts, sprinkle with salt and pepper, and cook on one side until browned, approximately 5 minutes.  Flip, sprinkle with salt and pepper, and brown the other side, approximately 5 minutes. Remove to a plate.

3.  Add ramp bulbs and stir until softened, approximately 2 minutes.

4.  Add chicken stock, cook to reduce slightly, approximately 5 minutes.  Stir occasionally. 5.  Add sorrel to the pan.  Stir until starting to wilt.  Add ramp greens to the pan and stir.. Return chicken to pan.  Cover, and simmer for 10 minutes, or until chicken is cooked through.  Serve hot with rice or egg noodles.
